Pedalling cadence

I'm often quite surprised to see people either struggling to ride their bike in a too-high gear, or spinning away like mad in a too-low gear. Just heading hobw from work and I passed two boys spinning like mad, then they passed me, then I passed them, etc. Finally I escaped.
But it does make me winder if riding a bike isn't as intuitive as I thought it was.
